Not to hammer this into the ground (especially hours after everyone's gone home) but it's the application not the material.
I'm sure you've heard that famous quote (help me out somebody) that goes something like (I'm paraphrasing) "If chromoly steel was discovered for the first time today, it would immediately be unanimously hailed by engineers as the greatest material ever known to Man."
I may be wrong- I've been using CF bars (mtb and road) for a long time. I've never used a CF stem. What I've always heard is that, while CF stems are pretty, there is little or no performance advantage to be gained. You don't see CF stems lighter than AL ones. And CF stems as light as the lightest AL stems are many times more expensive by comparison. This is directly related to the engineering limits of the material. You likely wouldn't get the same quality of vibration dampening in a stem (as compared to handlebars) anyway. The main reason to purchase a CF stem is cosmetic, rather than any performance advantage.
